Ricetta presa dal solito librino che ho usato anche per la cotognata ("Freschezza sotto vetro" di Gianna Montecucco Roglei ... libro del 1974 "fregato" a mamma)
Come ogni anno devo trovare il modo di smaltire questi frutti regalati dalla vicina :-)
Lavate molto bene le mele cotogne tagliatele a pezzettini e mettetele in una pentola coperte di acqua. Cuocetele finchè saranno morbide, a questo punto scolatele e passatele al passaverdura.
Pesate la purea di mele cotogne e aggiungete pari quantità di zucchero (io invece per ogni kg di purea ho usato mezzo kg di zucchero).
Io aggiungo anche il succo di un limone per ogni kg di purea di frutta.
Rimettete tutto sul fuoco e fate andare finchè la marmellata raggiungerà la giusta consistenza (ci vorrà pochissimo tempo perchè questi frutti sono ricchi di pectina).
Prendete dei barattoli di vetro, già sterilizzati, versateci la
marmellata ancora caldissima e chiudeteli. A questo punto potete far
raffreddare i barattoli a testa in giù o potete sterilizzarli di nuovo
(come faccio io) in una pentola piena di acqua facendoli bollire per 30
minuti.
